Easy Smoothies

If I had to name my cooking philosophy, besides gluten free/allergen free/healthy-ish, it would be something along the lines of easy food for lazy people. Or easy food for busy people. Or healthy food for people who are both lazy and busy.

I don't have a particularly sophisticated palate, but I do have a sensitive digestive system and a very picky child.

So I try to stick with foods that taste good but are simple, appealing, and easy to digest. Mini Meerkat also loves to help me cook and bake, so I really like making things that we can make together.

Mini Meerkat is hit or miss on eating fruit, but she loves smoothies. All you need is frozen fruit, a liquid, and a blender.

This time around we used mixed frozen fruit with no additives (peaches, strawberries, blueberries, and raspberries) with vanilla coconut milk. Mini Meerkat can put the fruit in the blender and help me pour the coconut milk. She doesn't like the sound of the blender, but she likes to push the button for the lowest/quietest speed. She can do it in short bursts, and since she controls the sound she can stop when it is too much. Since this smoothie recipe just uses frozen fruit instead of ice, it does blend on the lowest setting.

It's a great way to get fruit and liquids into Mini Meerkat.

You can also add fiber and probiotics to your smoothies for extra awesomeness. You can mix and match different frozen fruits and juices for variety. The berries and peaches pair nicely with the vanilla coconut milk. Orange juice or lemonade go really well with strawberries. You can use fresh fruit with liquid and ice, but it takes more blending and makes horrible noises when the ice gets crunched.

Even though it has been well below freezing outside, Mini Meerkat has been enjoying making her own smoothies.

  1. I need to get back into the smoothie making routine... I just got a bag of hemp seeds and I'm dieing to know if I can sneak some protein into Little Miss's diet that way. Have you tried them?

    1. I haven't tried hemp seeds before. I have put flax seeds in smoothies before, and it worked well. I just picked up some chia seeds, though I haven't quite figured out what to do with them yet. I've used protein powders before, but it can be hard to find ones that are dairy/soy free.
