Kale Pizza

It's not a big secret that I'm a bit of a hippy, but I have recently fallen in love with the very trendy and hippy adored vegetable: kale. It reminds me of spinach that tastes better. I think it tastes lovely on its own and pairs well with other veggie dishes.

I've been trying to combat my stress eating ways, but sometimes I still find myself craving food that is no good for me. Even though I'm not even much of a pizza lover, I have been craving pizza lately. Regular pizza is a disaster for me, because it is chock full of gluten, dairy, and soy. 

I wandered around the grocery store for a bit, and came up with a pretty easy gluten free, soy free, and dairy free pizza. Grocery shopping when hungry is always a dangerous proposition, so I was looking for a dinner that would be quick and simple to throw together. All it took was:

Daiya Mozzarella Style Shreds

Assembly was very easy. While the oven was preheating, put the crusts side by side on a pan. I layered sauce, the daiya "cheese", and topped it off with plenty of kale. The kale shrinks when you cook it, so don't be afraid to go heavy on the kale.

I let it cook in the oven until the kale on top was crispy. You can see how much it shrank during cooking.

The finished product satisfied my pizza urges, but this isn't one I will be making every day. It relies a little too heavily on packaged ingredients. I would rather use a homemade pizza crust recipe, but I have yet to find anything I'm happy with. Daiya is the best dairy and soy free cheese substitute I have found, but I can only enjoy it in small doses. Next time around, I want to try using a homemade crust and go lighter on the cheese and heavier on the veggies.

  1. We totally love our Daiya here! One of Little Miss's favorites is Daiya "cheezy bread" that I make by melting Daiya over soy-free burrito wraps. I sprinkle liberally with garlic salt and have even found I can sneak some flax seed into the mix. thanks for introducing us to Daiya way back when!

    1. That sounds delicious! I'm so glad you guys are loving it. I can't get Mini Meerkat to eat the daiya, but she does like the pizza crusts.
